The moment I first picked it up. I was amazed by how light and easy it was to handle. In Japanese cuisine, there is a strong focus on the tools we use. Sharpness is crucial, but so are elements like rust resistance and durability. The way a knife effortlessly cuts through the fibers of ingredients can dramatically impact both the texture and overall quality of the dish.

This versatility greatly enhances precision in your work. Some knives are so flexible that they feel "as soft as a mat," and it's this flexibility that allows for unique expressions in your cooking. They feel like an extension of my hands—truly a cherished partner in my work.

A History Born from
an Unforeseen Event
The founder and former chairman, the late Tatsuo Kobayashi, studied at the Art Institute of Chicago in 1954. While balancing his studies, he worked part-time at a restaurant as a cook. The knife provided to him by the restaurant was not only heavy and dull, but also dangerously pointed. Struggling with this unwieldy knife, he once accidentally dropped it on the floor. The tip of the knife stuck into the floor, and he narrowly avoided a serious injury to his foot. As he tried to pull the knife out, it snapped about 3 cm from the tip. The broken knife was so unsightly that he used a sharpening stone to round the tip and hone the blade. Surprisingly, the result was much easier to use, greatly improving his work efficiency.
He couldn’t understand why knives with such sharply pointed tips were so commonly used. They were dangerous, heavy, inconvenient, and seemed to offer no real advantages. He wondered which dishes truly needed a pointed tip. However, after spending time as a cook in the U.S., he realized that no American dishes required a pointed knife. In fact, even with everyday cooking, he never found a round-tipped knife inconvenient. He later recalled how the rounded tip allowed him to cook with peace of mind, feeling both safer and more focused.
After returning to Japan in 1958, Tatsuo worked in various jobs before founding his own knife company in 1965. Drawing from his experiences abroad, he began creating knives that were safer, sharper, lighter, and easier to use.
Sixty years since its founding, MAC Co., Ltd. has evolved with the times, consistently pursuing 'sharpness' while supporting chefs and home cooks around the world. Looking back on these six decades, we are deeply grateful for the support and camaraderie we've received. Our knives are not just tools; they help breathe life into ingredients and are an essential partner in enjoying meals with family and friends. Behind every knife lies the skilled craftsmanship of our artisans and techniques honed over many years. Moving forward, we will continue to pursue the highest quality.
